Peanut Blossom Cookies

1/2 C creamy peanut butter, room temperature
1/2 C margarine, room temperature
1/2 C granulated sugar
1/2 C firmly-packed brown sugar
1 egg
1 T milk
1 t pure vanilla extract
1 3/4 C flour
1 t baking soda
1/2 t salt
1/4 C granulated sugar (save for dipping)
48 (doesn't really make that many-I don't know whose 1" they were using)

Preheat oven to 375 degrees F.

In a large bowl, cream margarine and peanut putter until light and fluffy. Gradually add the sugars; beating until light and fulffy. Add egg, milk and vanilla extract; beat well. Add flour, baking soda and salt; stir into creamed mixture until well mixed.

Roll cookie dough into 1-inch balls; roll balls in the remaining 1/4 C sugar. Place balls, 2 " apart, onto ungreased cookie sheets.

Bake 8 minutes. Remove from oven and immediately press a chocolate kiss into the center of each cookie (cookie will crack around the edges). Remove from cookie sheet and let cookies cool on wire cooling racks.
