Waffles

This is Uncle Lanny's waffle recipe. They are so fluffy and light and are totally worth the extra couple of minutes to make them from scratch. We make them a lot on Saturday mornings. I like to double the recipe and freeze the left overs.

1 cup flour
1 cup milk
1 tsp. baking powder
a bit of salt
1 TBSB sugar
1 tsp. vanilla
1/4 cup butter, softened
2 eggs, separated. Put the yolks in with other ingredients. Whip whites to almost stiff in separate bowl.

Mix all ingredients, except egg whites. Don't mix too much. Fold in egg whites. Cook according to your waffle iron. To add blueberries, spread batter on iron, spread blueberries out, then cover with batter. YUM!!
