Eggs

. If a piece of eggshell gets into the egg use a piece of eggshell to pick it up.
.To slice hardcooked eggs cleanly first dip your knife in boiling water.
.To prevent cracking pierce the end of the egg before boiling, using a pin. This will allow air to escape from the shell.
.Add vinegar to the water to seal cracked eggs.
.Rinse a bowl with cold water before you beat egg yolks in it--the yolks will slide out without sticking to the sides of the bowl.
.Add 1 t white vinegar and a pinch of salt to egg whites if they will not stiffen when you are beating them.
.Eggs can be mixed and then put into ice cube trays to be frozen. One cube is equal to an egg for a recipe.
