Emergency Chocolate Cake

Gabe's learned to make this cake at young mens, and what he brought home was quite good:

2 C Flour
1 C Sugar
1/4 C Cocoa Powder (dutch processed...)
2 tsp Baking soda
1 C Mayo
1 C Water
1 tsp vanilla

Whisk flour, sugar, cocoa, and baking soda in large bowl. In separate bowl, whisk mayo, water and vanilla. Combine.

Cook on middle rack at 350 for 35 to 40 minutes in a greased 8-inch pan.

They call it emergency because there are no eggs or butter required. The recipe says you can dust it with powdered sugar, add a dollop of whipped cream, or make a chocolate frosting to go on it.

For high altitude add 2 tbsp flour and cook at 375.
