Cookie Dough:
4 sq unsweetened baking chocolate (4 oz)
1 1/4 C (2 1/2 sticks, 10 oz) chilled butter
2 C white (granulated) sugar
2 beaten eggs (whip in a glass with fork)
2 tsp baking soda
1/2 tsp salt
1/3 C corn syrup
2 TBSP water
1 TBSP vanilla
4 C flour (packed)
Topping:
1/4 C white (granulated) sugar
1/4 C finely crushed mint candy canes (about 12 mini)
Melt butter and chocolate. Set aside to cool.
In large mixing bowl combine sugar and eggs.
Add baking soda and salt.
Mix in corn syrup, water and vanilla.
Add 1/2 flour. Mix well, then add the rest.
Unwrap candy canes and crush in a bag with a hammer on garage floor (save counters).
In separate bowl mix candy canes and sugar with fork.
Roll dough into 1 inch balls, then roll in sugar/candy cane mix.
Place on greased cookie sheet, flatten slightly.
Cook at 350 for 8 to 10 minutes.
remove from cookie sheet immediatly - candy cane may stick.
