(makes about 12 dozen cookies)
1 1/2 C butter
3 C brown sugar
4 T water
4 C semi-sweet chocolate chips
4 eggs
5 C flour
2 1/2 t soda
1 t salt
3 boxes Andes mints
In a large heavy saucepan over low heat cook butter, brown sugar and water until melted. Add chocolate chips and stir until part melted.
Remove from heat and continue to stir until melted. Pour in large bowl and let stand 10 minutes to cool slightly. With mixer, beat eggs
one at a time. add dry ingredients beating just until blended. Chill dough about 1 hour. Preheat over to 350. Line sheet with foil.
Roll 1 t of dough into ball. Bake 9 min. Cookies will crisp as they cool. Remove from oven and IMMEDIATELY place 1/2 mint on hot cookie.
Allow mint to soften and swirl centers a little.
