Healthy French Dip Sandwich

1 large sweet onion cut into 1/2 inch thick slices, rings sep.
1 - 2 1/2 lb beef brisket or boneless beef bottom round roast
2 Cloves garlic, minced
1 tsp dried thyme or oregano
1/2 tsp ground black pepper
1 1/4 C low sodium beef broth
1 TBSP Worcestershire sauce
1 medium red or green bell pepper, sliced
1 16 oz loaf whole-grain baguette, cut into 6 pieces, or six whole grain rolls (or sandwich rolls)

Put onion slices into slow cooker. Trim fat off beef if necessary and place on top of onions. Sprinkle with minced garlic, oregano (or thyme), and pepper.
Add broth, 1/2 C water and Worcestershire sauce.
Cover and cook on low for 9 to 10 hrs.
Add bell pepper for last 10 minutes
Slice meat thinly. Add to bread with desired onions and/or peppers.
Dip in juice and enjoy!

From the Ladies Home Journal. We used the brisket and put on white sub rolls, no peppers. Cooked up some fries and had a really nice meal with about 15 minutes prep in the moring and 15 minutes to let the fries heat up while we sliced the meat right before dinner. The dipping sauce is a little different, but still yummy with less sodium.
