Marshmallow Fondant

I got this recipe from my friend Kendra. I have not personally tried making a cake with it, but I have had a cake that she made with it and it is good and seemed to work well.

16 oz bag of mini marshmallows
2 lb bag of powdered sugar
2 Tbsp water

Microwave water and marshmallows for 20 sec at a time and keep stirring-not tons and tons, but until it is smoothish and then add flavoring and food coloring (the gel works the best). Then add the powdered sugar bit by bit and mix until not sticky (mix in bowl until it seems good enough to pick up and knead with your hands). Then knead until not sticky any more. Use immediately or store in a plastic bag in the fridge for up to 30 days. If it's hard when you take it out of the fridge, put it in microwave for like 15 seconds at a time and it will soften up to roll out. Roll out and decorate!

I've also heard online to coat your hands and arms in crisco to make for less sticky mess when making it.
