
This is the easy recipe from the Betty Crocker cookbook, but my kids swear it is the best. They are also good with berries mixed in the batter.
INGREDIENTS:
1 large egg
1 cup all purpose flour
1 cup buttermilk (if we don't have buttermilk, I put 1 tbsp vinegar in with milk to make 1 cup)
1 tbsp packed brown sugar
2 tbsp vegetable oil
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
DIRECTIONS:
1. Beat egg in medium bowl (we like to use a large measuring cup so that we can just pour the batter onto the griddle) with hand beater until fluffy. Beat in remaining ingredients until smooth.
2. Heat griddle or skillet over medium heat or to 375*. Pour on batter, flip when bubbly. Take off heat when golden brown. Eat.
