Hash Brown Quiche

Hash brown or recipe called for 8 hash brown patties- I think I used about 2 cups
(I covered the bottom of an 9 x 13 pan well)
Pour 1/2 C melted butter over the hash browns and bake for 20 minutes in a 350 degree oven.
Remove from oven and sprinkle 1 C cooked/cubed ham and 1 C grated cheese.
In a large bowl mix 8 eggs, 1/2 t salt and 2 C milk or cream and stir well.
Pour mixture over cheese and ham. Bake for 30 minutes until puggy and golden brown.
Makes 8 servings (but we each ate 2 )

If you were having a large crowd for breakfast this would be wonderful as the egg/potato dish along with
Laurel's Carmel/Apple French Toast.
